Inspired by a 1968 French-made DUX classic knife passed down through generations, the BaouRouge Precision Slicing Knife builds on a legacy of quality and performance. After 50 years of use, the original knife was beginning to show its age, sparking the vision for a modernized version that honors its roots while incorporating cutting-edge improvements.
The Evolution of a Classic
The first real knife with a cutting guide was patented in 1953 and its technology remained exclusive for two decades. Today, the Swiss company that owns the brand has most notably replaced the aluminum guide with plastic on its modern versions. I wanted to preserve the original all-metal design. My classic model was now damaged but had otherwise proved perfectly suited and reliable for over half a century. Instead of settling for an expensive, plastic-heavy modern alternative or a bulky rotary slicer, I sought to rejuvenate my old faithful with modern touches, an initiative that was made possible via a crowdfunding project in 2016. Thereafter, it took over a year and many efforts to deliver the first version of the BaouRouge Precision Slicing Knife.
Modern Precision & User Feedback
Now in its third version, this knife retains the original mechanical principles—a slightly angled blade paired with a rigid, adjustable cutting guide—while enhancing length, balance, ergonomics, and comfort. Each version has been improved through extensive user feedback, resulting in a slicer that surpasses the performance of its predecessor. Commercial Launch
The first few hundred units of the Precision Slicing Knife were delivered to the project’s backers, with more units sold at markets across France, or via agents to a few retail stores. As word spread, the knife started to gain recognition in North America and even caught the attention of Japan’s prime TV channel, NHK. It was featured in a non-commercial program, showcasing its unique design and performance to a notably demanding audience. It was also later showcased, this time for for sale on Japan’ TV Asahi.

Materials That Last
The original 1960s hard polymer handle was no longer suitable due to modern standards for recyclability and durability. After extensive testing, we selected a tough ABS material that ensures the handle withstands stress without bending, securing the rails and maintaining overall rigidity.
Blade Selection
Choosing the right steel means balancing hardness, rust protection, flexibility and durability which can be a daunting task. We made it easy by referencing high-end serrated knives and selected an alloy known for its reliability and longevity and used by other respected high-end brands – ensuring the BaouRouge blade matches the high standards of the original design.
